This fresh, rose-petal gin was created to honor the mother of the head distiller, Rose. It is a special small-batch gin, developed as a full reinterpretation of the Wild Botanical Gin recipe.

For this naturally pink and floral gin, three varieties of roses are used: the rare and exclusive Wild Rose from the Wicklow mountains, the large and fragrant Heritage Roses, and the ancient, prized Damask Rose. The gin is redistilled with additional fruits, flowers, spices, and plenty of fresh rose petals.

Due to the delicate ingredients, this gin is distilled more slowly and gently than the Wild Botanical, using steam distillation to maximize the extraction of essential oils and flavors. After distillation, it is further infused for 16 to 18 hours with more roses to intensify the flavor and give it a beautiful pink hue.

To select the best ex-Sherry Oloroso barrels, Glendalough goes to the small Andalusian town of Montilla, home of the famous Pedro Ximénez grape. Here, they can meet the producers in person, choose the bodega, the spirit, the aging, and finally the barrels. This hands-on approach positively influences the flavors of the Double Barrel whiskey.

On the nose, it reveals notes of red fruit, along with hints of lemongrass, figs, raisins, and nutmeg. On the palate, flavors of butter, honey, pepper, cherry, and maraschino emerge.
